Holiday Recipe Challenge: Sarah DeYoung's Mint Chocolate Soft Fudge

This fudge is light and creamy and ultra delicious. If you have missed the fudge from Cabela's, this will definitely fill that sweet tooth!

  • Line an 8x8 inch pan with parchment paper and grease.
  • Add the chocolates and Keto Chow to a mixing bowl. A standing mixer will work best but a hand mixer will also work.
  • Using the stick of butter, butter the sides of a large, lidded, heavy pot. Pour cream and xylitol into the pot and stir together. Place over medium heat and stir constantly, just until mixture comes to a rolling boil. At this point, cover with a lid for 1 minute and then remove lid. Make sure to set a timer. Continue cooking on medium heat without stirring to a soft ball stage, 230 degrees on a candy thermometer. This takes approximately 2-3 minutes, but it's best to use a thermometer.
  • Remove from heat, add butter, vanilla, and mint extract. Let it sit for 1 minute in candy mixture without stirring.
  • Pour candy over chocolates and Keto Chow in the mixing bowl. Do not scrape pan. Beat fudge on low (or stir) for 2 minutes. Turn up speed to high for 5 minutes. It is very important to make sure to whip for at least 5 minutes. It will look like a soft marshmallow cream texture.
  • Pour into the prepared pan. Cover and refrigerate until set - overnight is best.
  • To cut, remove slab with parchment paper and use a sharp knife to cut into even squares. Keep refrigerated in a sealed container.

Notes

Xylitol works best. It will melt and not leave a grainy texture. Allulose also works well but has a tiny grain to the texture. Do not use erythritol as it will crystalize after being heated.
Timing is important. If you cook the candy for too long, the fudge will crystalize and harden.
